RESUMO

Essential polyunsaturated fatty acids (PUFAs) prevent cardiometabolic diseases. We aimed to study whether a diet supplemented with a mixture of n-6/n-3 PUFAs, during perinatal life, attenuates outcomes of long-term metabolic dysfunction in prediabetic and obese mice. Seventy-day-old virgin female mice were mated. From the conception day, dams were fed a diet supplemented with sunflower oil and flaxseed powder (containing an n-6/n-3 PUFAs ratio of 1.2 : 1.0) throughout pregnancy and lactation, while control dams received a commercial diet. Newborn mice were treated with monosodium L-glutamate (MSG, 4 mg g-1 body weight per day) for the first 5 days of age. A batch of weaned pups was sacrificed to quantify the brain and pancreas total lipids; another batch were fed a commercial diet until 90 days of age, where glucose homeostasis and glucose-induced insulin secretion (GIIS) as well as retroperitoneal fat and Lee index were assessed. MSG-treated mice developed obesity, glucose intolerance, insulin resistance, pancreatic islet dysfunction, and higher fat stores. Maternal flaxseed diet-supplementation decreased n-6/n-3 PUFAs ratio in the brain and pancreas and blocked glucose intolerance, insulin resistance, GIIS impairment, and obesity development. The n-6/n-3 essential PUFAs in a ratio of 1.2 : 1.0 supplemented in maternal diet during pregnancy and lactation prevent metabolic dysfunction in MSG-obesity model.

This study evaluated the effect of the dietary replacement of sunflower oil with perilla oil in Nile tilapia (GIFT strain) at 0, 10, 20 and 30 days. There was an increase in total omega 3 fatty acids (n-3) in muscle tissue (from 63.6 to 181.5 mg g(-1)) and a decrease in total concentration of omega 6 fatty acids (n-6) ranging between 255.6 and 196.1 mgg(-1). Amongst the n-3 fatty acids, the concentrations of alpha-linolenic acid (18:3n-3) and docosahexaenoic acid (20:6n-3) increased by 9.4 and 1.9 times, respectively, after 30 days for the perilla oil-enriched diet. The n-6/n-3, polyunsaturated and saturated fatty acids (PUFA/SFA), and polyunsaturated and monounsaturated fatty acids (PUFA/MUFA) ratios tended to stabilize after 20 days under the perilla oil-enriched diet. Incorporation of perilla oil as a lipid source in the diet of tilapia for 20 or 30 days resulted in significant changes in the fatty acid composition of the fish muscle tissue, contributing to increase its nutritional value.

The quantification of monounsaturated and polyunsaturated trans fatty acids in partially hydrogenated fats by gas-liquid chromatography on a CP-Select CB-FAME capillary column was optimized using equivalent chain length values of fatty acids methyl esters that could coelute in the temperature range from 155 to 200 degrees C. The most appropriate temperature for the simultaneous determination of these trans isomers is around 197 degrees C. It is proposed a system to discriminate trans from cis octadecenoic fatty acid methyl esters based on the angular coefficient values of the equivalent chain length curves. The limits of detection and quantification were 0.28 and 0.93 mg g(-1). Quantification was performed in the range from 0.93 to 280 mg g(-1). Quantification accuracy was estimated by spike recovery of elaidic and trans-13-octadecenoic acids in hydrogenated fat samples. The obtained levels were from 97.60 to 103.28% for elaidic acid and from 98.12 to 99.27% for trans-13-octadecenoic acid. These results indicate that the accuracy of the methodology proposed for the quantification of monounsaturated and polyunsaturated trans fatty acids in hydrogenated fats is adequate.

Os esportes radicais são caracterizados por um forte componente de risco e aventura, sendo responsáveis por desencadear elevados níveis de estresse psicológico e fisiológico. O estresse é uma reação do organismo que ocorre em função de alterações psicológicas e fisiológicas desencadeadas no indivíduo, quando esse se depara com situações que o amedrontam, excitam, confundem ou até mesmo promovem sensações de prazer. Assim, este artigo visa contribuir com a compreensão das alterações fisiológicas, ocorridas no organismo de praticantes de pára-quedismo, em decorrência do salto. Para elaboração do manuscrito foram consultadas as bases de dados Web of Science, Medline e Scielo com as palavras-chaves: parachute jumping, skydiving, psychological stress, epinefrine, norepinephrine and lactate. Com base nos estudos investigados, foi constatado que devido ao estresse psicológico ocasionado pelo salto de pára-quedas, há um aumento nos níveis plasmáticos de adrenalina, noradrenalina, lactato, cortisol, sódio e potássio, que a longo prazo podem trazer conseqüências a saúde.


Radical sports are characterized by a strong component of risk and adventure, promoving high levels of psychological and physiologic stress. Stress is a reaction of the organism that it happens due to the psychological and physiologic alterations, when the individual faces situations of fear, excitement, confuses, or even situations that promote pleasure sensations. Thus, the purpose of this article is contribute with the understanding of the physiologic alterations, that it happen in the organism of parachutists praticing, due to the jump. Databases Web of Science, Medline and Scielo were consulted for elaboration of this review, by search with the keywords parachute jumping, skydiving, psychological stress, epinephrine, norepinephrine and lactate. Based on the investigated studies, was evidenced that psychological stress caused by parachute jumping there is a increase in the plasmatic levels of the epinephrine, norepinephrine, lactate, cortisol, sodium and potassium that the long-time can have consequences for the health.

Os ácidos graxos poliinsaturados abrangem as famílias de ácidos graxos ômega-3 e ômega-6. Os ácidos graxos de cadeia muito longa, como os ácidos araquidônico e docosaexaenóico, desempenham importantes funções no desenvolvimento e funcionamento do cérebro e da retina. Esse grupo de ácidos graxos não pode ser obtido pela síntese de novo, mas pode ser sintetizado a partir dos ácidos linoléico e alfa-linolênico presentes na dieta. Neste artigo são considerados os principais fatores que podem inibir a atividade das enzimas dessaturases envolvidas na síntese dos ácidos graxos de cadeia muito longa. São apresentadas as recomendações da razão ômega-6/ômega-3 na dieta, propostas em diversos países, sendo verificada a convergência para o intervalo de 4 a 5:1. São relacionados alimentos que podem contribuir para aumentar a ingestão do ácido alfa-linolênico e dos ácidos graxos de cadeia muito longa. A essencialidade dos ácidos graxos de cadeia muito longa é muito dependente do metabolismo do indivíduo, sendo que a razão n-6/n-3 da dieta exerce grande influência nesse sentido.


Polyunsaturated fatty acids include the classes of fatty acids designated as omega-3 and omega-6. Very-long-chain polyunsaturated fatty acids as arachidonic and docosahexaenoic have important roles in the development and functioning of the brain and retina. This group of fatty acids cannot be synthesized by de novo pathway, but can be formed from linoleic and alpha-linolenic acid present in diet. In this article, the main factors that can inhibit desaturase enzymes activity involved in the synthesis of MLC-PUFAs are considered. Recommendations of omega-6/omega-3 ratio in diet proposed in several countries are presented, showing a coverage range from 4 to 5:1. Foods that are sources of alpha-linolenic acid and Very-long-chain are listed. The essentiality of Very-long-chain is very dependent of individual metabolism, and omega-6/omega-3 dietary ratio has a great influence in their health effects.

This study examined the concentration (mg/g) of trans polyunsaturated fatty acid (TPFA) in five soybean oil brands by gas-liquid chromatography. Tricosanoic acid methyl ester was used as the internal standard. All samples analyzed presented trans 18:2 fatty and trans 18:3 acids in detectable amounts. The concentration of TPFA ranged from 5.8 to 30.2 mg/g, with a mean concentration value of 18.4 mg/g. Trans 18:3 fatty acids had the highest TPFA group concentrations, which ranged from 3.9 to 16.3 mg/g. The main isomer of this group presented the 9c, 12c, 15t configuration. For trans 18:2 fatty acids, concentrations ranged from 1.9 to 14.0 mg/g with a mean value of 8.1 mg/g. Alpha-linolenic acid (all cis) concentrations ranged from 30.7 to 60.6 mg/g and their degree of isomerization ranged from 6.0 to 31.5, indicating that the deodorization process varies from one producer to another. From per capita consumption of soybean oil brands in Brazil and their TPFA concentrations, it is possible to conclude that their contribution to the average TPFA intake per person in Brazil is 0.4 g/d.

RESUMO

Este artigo revisa as principais fontes de ácidos graxos trans na dieta e as implicações nutricionais da ingestão elevada destes isômeros. São apresentados resumidamente os métodos analíticos utilizados na identificação e quantificação dos ácidos graxos trans, sendo abordados as suas vantagens e desvantagens. Os alimentos que empregam gordura parcialmente hidrogenada na sua produção, são fontes importantes de isômeros trans na dieta da maior parte da população em países industrializados. Este estudo compara os níveis de ácidos graxos trans em gorduras hidrogenadas, margarinas e batatas frita, analisados em diversos países, incluindo o Brasil. Esta avaliação indica a presença de níveis elevados de isômeros trans em alimentos produzidos no Brasil.
